This perennial herb has erect, woody stems that grow 60-120 cm tall. Its leaves are alternate, ovate to slightly heart-shaped, with serrated edges and a velvety texture due to dense stellate hairs. They can be up to 3 inches long and 1 inch broad, and occasionally have 3-5 lobes. The stems die back in autumn but produce few lateral branches before then. The leaves are attached to the stem by short petioles and have entire or irregularly toothed margins. Flowers appear from August to September and resemble those of the common Mallow, but are smaller and pale-colored. They can be found either singly (axillary) or in clusters (panicles). Each flower has united stamens with kidney-shaped anthers that are one-celled. After flowering, the plant produces flat, round fruit called "cheeses".
Roots from commercially grown plants at least 2 years old are harvested in autumn. The Council of Europe recognizes marshmallow as a natural food flavoring. According to EU regulations, it can be added to food products in small amounts, with the possibility of limiting its active components depending on the final product's formulation. In the past, marshmallow was also approved for use in foods in the United States.
