Ginger is a tropical perennial plant that grows from thick, underground rhizomes. It typically reaches 1-1.5 metres in height, with long, narrow leaves and slender stems bearing clusters of greenish-yellow flowers. Originally native to Southeast Asia, ginger is now cultivated in India, China, and other regions with warm, humid climates and well-drained soil. The plant's rhizomes mature after 8-10 months, at which point they are harvested for use in cooking and processing.

The mature rhizomes have a thick, knobby texture with a pale brown outer layer and yellow interior. They're cleaned to remove soil and debris, then sliced uniformly. The slices are dried at low temperatures to preserve their colour, texture, and natural scent. After drying, the pieces are cut and sifted into consistent sizes, resulting in a clean product that retains its characteristic ginger aroma and flavour.

The cut and sifted ginger root pieces have a uniform size, slightly fibrous texture, and light tan to pale yellow color after processing. This form is ideal for storage, blending, and use in both cooking and herbal applications, while preserving the rhizome's aromatic properties.

Ginger Root C/S can be used in a variety of ways, including soups, stews, marinades, spice blends, dry rubs, teas, vegetable dishes, baked goods, and experimental recipes.
