Habitat: Caraway is native to Europe and Western Asia, but is now cultivated in several Indian states, including Bihar, Orissa, Punjab, Bengal, Andhra Pradesh, as well as the Himalayan regions of Kumaon, Garhwal, Kashmir, and Chamba. It can also be found growing wild in the North Himalayas. In traditional European cuisine, caraway seeds are a key ingredient in many savory dishes due to their strong aroma. They belong to the parsley family (Umbelliferae), which includes other well-known herbs and spices like dill, anise, fennel, and cumin. The Carum carvi plant grows up to two feet tall, with feathery leaves. Its seeds are crescent-shaped, dark brown, and have five ridges running lengthwise on their surface. They resemble cumin seeds in appearance. Caraway seeds are harvested early in the morning to minimize waste. After harvesting, they are left to dry in the sun for a few days before being extracted through threshing, either manually or using machines.

How to use:

Caraway seeds are commonly used as a spice.

Hot Infusion:

To make a tea from dried herbs or flowers, place 2-3 tablespoons of the dried material in a cup or teapot. Pour hot water over it, then cover with a lid for 10-30 minutes. This process extracts antioxidants, enzymes, vitamins, flavonoids, and volatile oils from the botanicals. Strain and press out as much liquid as possible before serving.
