Citrus limonThis plant is a shrub or small evergreen tree that typically grows 9-12 feet tall and can reach up to 20 feet. It has irregularly shaped, thorny branches with bark that varies in color from grey on the trunk to green on younger branches and purplish on twigs. The leaves are ovate-oval, about two inches long, with serrated edges and sharp spines at the base of the stalks. They start out reddish when young and mature to dark green above and light green below. The leaves are also oblong or elliptic in shape, 2-4 inches long, and have fine teeth along their edges. The plant produces mildly fragrant flowers that can be solitary or clustered in groups of up to three in the leaf axils. The buds are reddish, while the opened flowers have four or five petals that are white on top and purplish underneath. The fruit is a bright yellow, ovoid berry about three inches long with a nipple-shaped end. It has an acid pulp and is indented over oil glands.

Approximately 47 cultivars have emerged over the centuries of lemon cultivation. One popular variety is 'Eureka', which produces a continuous abundance of lemons throughout the year. It's commonly found in supermarkets, also known as 'Four Seasons' due to its unique ability to bear fruit and flowers simultaneously.

The white, spongy interior of the Limonis Cortex peel varies in thickness, while its outer yellow layer has a fragrant scent and bitter taste. Lemon peel can be used fresh or processed through drying, candying, or pickling. The essential oil extracted from the peel is a significant flavor component. Lemon fruit, with its ellipsoidal shape and bright yellow color, serves multiple purposes worldwide, primarily for its juice. This juice has both culinary and cleaning applications. At home, lemon juice can be used to remove stains, while a salt-coated slice of lemon can clean copper-bottomed pots. The essential oil from the peel is also commonly found in furniture polishes, detergents, soaps, shampoos, perfumes, and colognes.

Limes and lemons belong to the same citrus fruit family and share similar nutritional profiles, but they differ in appearance: limes are green and smaller, while lemons are yellow and larger. Despite these physical differences, both fruits offer comparable health benefits due to their high vitamin C content.
