Ginger is a tropical perennial plant that grows from thick underground stems called rhizomes, reaching heights of 1-1.5 metres. It has long, narrow leaves and slender stems with greenish-yellow flowers during the growing season. Native to Southeast Asia, ginger is commonly cultivated in India, China, and other tropical regions where it thrives in warm, humid climates with well-drained soils. The rhizomes mature after 8-10 months of growth, at which point they are harvested for use in cooking and infusions.

The harvested rhizomes are thoroughly cleaned, peeled, and either sliced or dried whole. They're then dehydrated at low temperatures to preserve their colour, texture, and distinctive aroma.
